6 Week Online PROGRAMME Outline

Course dates: Oct 26TH – Nov 29TH

Each week you will have access to join a 1.50 H / 2-hours virtual live cooking session where you will learn cooking technique for a perfect dinner.

(These will take place on Tuesdays, TIME TBC) 

NOTE: Sessions are recorded, so if you’re unable to join the lives, you can watch the recordings at your own time ;)

PROGRAMME

26th October

  • How to make the best Creamy risotto

Spinach Risotto and Grilled mushrooms breadcrumbs

Have you ever had a bad risotto experience? Did you know that like pasta making it has to be al dente? In this live session, I will teach you my secret tips on how to create the perfect al dente creamy and delicious risotto, share ingredients inspirations for your holiday time. This is one of my auntie’s recipes! Forget about making salty rice puddings ever again!

It’s guaranteed to become a regular rotation in your weeknight repertoire.

2nd November** Wed Class

  • Get your cooking basics right

Linguine with aubergine’s pesto and lemon swordfish

In this class, you’ll learn how to turn pesto into any ingredients using the right and basic ingredients. You’ll learn the best way to pair a pasta sauce to shape, and how to give extra flavours to your dishes.


8th November

  • Learn the traditional Sicilian flavours

Pumpkin caponata with black rice

Have you ever wondered how to make the best caponata? Here I will teach you how to make one of our favourite ones which you can serve in so many different ways, and this time with black rice (or any good basmati rice). You will make sure you will have this every week!

15th November

  • How to turn your pasta sauce into a cream without cream!

Creamy Lemon Pasta Linguine with Mum’s fruity cheesecake

One of the most loved dishes this summer during my sailing tour. You will learn how to turn any pasta sauce into the most divine creamy sauce just with a few tips and secrets. This dish will then be accompanied with a delicious dessert created by Mamma Lina.

Simple creative ideas just in time for your Christmas holidays.


22nd November

  • How to use your oven to confit your ingredients

Pistachio Pesto Rigatoni with confit tomatoes and stracciatella served with a sweet and sour delicious fruity salad

Did you know that with a few little tricks you can make your dishes stand out? Learning how to pair sweet and sour ingredients to create savoury dishes OR turning tomatoes into great toppings for your pasta and side dishes will be your favourite thing to do after this delicious class

29th November

  • How to create your ultimate “Involtini di pesce spada”

Swordfish Sicilian wraps in orange zest

Yeah, it’s not pasta this time! But it’s one of the dishes which will make your mouth water and re-create every time you have family and friends over for supper. I will share my tips on layering, flavour combinations, and how to perfect your sauces. You’ll never look back.

FAQs

When the Autumn course is going to start?

The "A Taste Of Sicily" Autumn Cooking Programme consists of a once a week cooking class of approx 1.5 hours / 2 hrs. The programme will last for 6 weeks - starting on the 26th Oct. However, if you want to grab your delicious pre-launch discount, you will need to sign up by Sunday 16th October.

When the Summer tour is going to end?

The Programme ends on the 29nd Nov 2022 just in time for Thanksgiving and Christmas for whoever celebrates it.

Will the classes be LIVE Or Recorded?

The classes will be LIVE but they will be recorded so that my sailors & travelers can access it at any time they want to.

Will I always have access to the recordings?

Each recording / replay will be accessible for 5 weeks after the LIVE session, so you can store them for your Christmas holiday.

What if I have some allergies or intolerances?

This is a perfect place to be because you are going to cook for yourself and it would be very simple to replace what you can’t eat. Of course I can help you with that!

Do I need to be an expert cook?

Not at all! This class is for everyone, I’ll be guide you step by step and at the end of the event you’ll have a perfect dish ready to be eaten!

Is my ticket refundable?

All tickets are refundable. However, if you are not satisfied with the quality and the delivery of the "A Taste Of Sicily" Autumn Cooking Programme, you have 2 weeks to request a refund, hence before the new course starts. The refund will need to have a proper motivation attached.

T&Cs

  • Price is per person, and not household. If two people from one household would like to cook together, they should book 2 different spots.

  • Please do not share digital recipe cards or live cooking sessions with anyone who isn’t part of The Pasta Studio Club.

  • If you choose the 3 monthly payment plan, you have a legal responsibility to pay the final payment even when the 6 weeks course has ended. The Sauce club is non-refundable as soon as the new course starts on 18th October.
